What is real or couverture chocolate?

Couverture chocolate contains no less than 35% cocoa. The result is a rich, flavourful chocolate most often used as a coating (“Couverture” is the French word for “covering”.) Some “chocolate” in the case of cooking chocolate is made by replacing the cocoa butter with vegetable fats. In the EU, these products must be labeled as “chocolate compound”, which ensures that consumers are not misled.

To ensure the chocolate crystals have formed in a completely uniform way

What is the difference between Orley Whip Dessert Crème and Orley Whip Cook ‘n Crème?
For savoury applications Cook ‘n Crème can be used in a whipped or unwhipped state In an unwhipped state Cook ‘n Crème can be used for cooking and hot dishes Dessert Crème can be used for sweet/dessert applications.
